The past few weeks I’ve been addicted to cookies. I know they’re not good for me at all, but for some reason I’ve been craving them. Since I want to lose the last few pounds of baby weight I needed to figure something out and fast. That’s where these little yummies come in. Bite size muffins are the perfect way to keep portion control. Enjoy!
- 1 Cup Whole Wheat Flour
- ½ Tbsp. Baking Powder
- ¼ Cup Sugar
- ¼ Cup Dried Apples, Chopped
- ¾ Tsp.Salt
- 3 Eggs Whites
- 1 Cup Vanilla Soy Milk
- ½ Cup Cinnamon Apple Sauce
- ¼ Cup Canola Oil
- Preheat oven to 400° F. Line a 24-cup mini muffin pan with mini cupcake liners. In a large bowl, combine flour, baking powder, sugar, dried apples, and salt. In a medium bowl, mix eggs, milk, applesauce, and oil. Mix flour and egg mixture thoroughly. Drop batter into pan cups by the tablespoon. Bake for 10 minutes or until muffin tops pop back up when pressed lightly. Let muffins cool before serving.
