Yep, it’s almost that time of year again. Carnival season! I love the rides, vendor booths, and of course, the food. Who could resist a smoked turkey leg, freshly spun cotton candy, and last but not least, funnel cakes?
I don’t like having to wait until summer before I can have a funnel cake. There’s no way I can just walk into a grocery store and buy them. So, how did I solve this problem? I made my own and added my creative touch. Enjoy!
- 1 Cup Vanilla Soy Milk
- 1 Cup Water
- ½ Tsp. Vanilla Extract
- 2 Large Eggs
- 2 Cups All Purpose Flour
- ¼ Cup Granulated Sugar
- 1 Tbsp. Baking Powder
- ¼ Tsp. Salt
- Canola Oil (For Deep Frying)
- 1 -21 Oz. Peach Pie Filling
- Optional: Confectioner’s Sugar
- In a large bowl, mix milk, water, extract, and eggs. Add flour, sugar, baking powder, and salt to egg mixture. Heat oil in a frying pan. Put batter into a liquid measuring cup. When oil is heated, put drops of batter into pan. Cook for 1 minute on each side until golden brown. Place fritters on paper towels to drain grease. Put peaches in a microwave safe dish and heat. Plate the fritters and place heated peaches on top. Lightly sprinkle confectioner’s sugar on top. (Can also be served with a scoop of vanilla ice cream.)
