After having smoothies, bowls of cereal, or anything quick I can grab for breakfast on the weekdays I love having a hot homemade breakfast on the weekends. The only problem is that I don’t like having to spend a lot of time preparing then cooking. One Saturday morning I decided to try something new and this is the yummy recipe I came up with. Enjoy!
Ingredients
9” Pie Crust
1 Large Yellow Onion, Sliced
¾ Cup Flour
1 Cup Whole Milk
8 Eggs, Beaten
10 Pieces Turkey Bacon, Cooked and Crumbled
2 Cups Mild Cheddar Cheese Shredded
Directions
Preheat oven to 450°. In frying pan, heat onions until they are lightly caramelized. Place pie crust in pie pan and prick the bottom with fork. Place pie in oven for 2 minutes, then remove. In large mixing bowl, mix flour, milk, eggs, bacon, and 1 ½ cups cheese. In an even layer, place onions in bottom of crust. Pour egg mixture over onions. Sprinkle remaining cheese over egg mixture. Place in oven for 25 -30 minutes. Cook until eggs are completely done and crust is golden brown.
I love a good hot breakfast, and this looks great! Maybe we’ll give it a try next weekend. 🙂
