Cherry and White Chocolate Chip Ice Cream Sandwiches

A batch of the cherry and white chocolate chip ice cream sandwiches are the perfect homemade treat. Stepping away from the traditional ice cream sandwich, these offer a world of flavor. - The Kreative Life

About five years ago I discovered cherry-flavored morsels. I don’t like artificially cherry-flavored candy, but I had to buy these just to see how they tasted. I baked a batch of cherry chip cookies and they were amazing! I’ve been baking with them ever since. Sometimes it’s hard to find cherry chips in the stores, so when I find them I buy at least three bags at a time. This time I wanted to try something a little different, but just as amazing Enjoy!

Cherry and White Chocolate Chip Ice Cream Sandwiches

Ingredients

For the Cookie

1⅔ Cup All-Purpose Flour

¾ Cup Butter, Softened

⅔ Cup Light Brown Sugar

⅓ Cup Granulated Sugar

¾ Tsp. Baking Powder

½ Tsp. Baking Soda

½ Tsp. Salt

1 Tsp. Almond Extract

1 Large Egg, Beaten

1 Cup White Chocolate Morsels

½ Cup Cherry Morsels

½ Cup Macadamia Nuts, Chopped

For the Cream Filling

5 Cups Whipped Topping

¼ Cup Whole Milk

½ Tsp. Vanilla Extract

3.4 Oz. Vanilla Instant Pudding

Instructions

Preheat oven to 375°. Line 8×8 glass baking dish with parchment paper, ensuring that the paper slightly hangs over the edges of the dish. In a large mixing bowl, combine all ingredients for cookie, except morsels and nuts. Gently fold in the morsels and nuts. Using a greased spatula, evenly spread half of the dough mixture into the dish. Bake for 15-20 minutes or until dough is fully cooked. Lift dough out of dish by the edges of the parchment paper and allow to cool on cooling rack. Place parchment paper back in dish and add the second half of dough. Cook following above instructions. Set cookies aside while cooling.


In a large mixing bowl, thoroughly mix all ingredients for cream filling. Cover bowl and place in freezer for 10 minutes. Line 8×8 glass baking dish with new piece of parchment paper and allow paper to slightly hang over edges. Place one of the cookies in the dish with the bottom facing up. Using spatula, evenly spread cream filling on top of cookie. Place second cookie, bottom-side down, on top of filling. Cover dish and place in freezer for at least 2 hours. Cut into squares before serving.

    Those look so yummy! I am not a huge cherry flavor fan, so I’d probably use a different kind of chips for this. The filling sounds so good.

    This would be best paired with hot chocolate or some lemonade or tea, perfect for afternoon get-togethers. I love that it’s also easy-to-prepare. The cherry-flavored baking morsels make a good twist to the usual treats we have at home.
