I’m four pounds away from my prepregnancy weight and I’m only four weeks postpartum! I’ve tried not to snack as much or eat sugary treats because I don’t want to take a whole year to lose my baby weight like last time. I’m trying to get back into shape by this summer (give or take). I still do have sweet cravings and I’ve tried everything to get rid of them, but nothing has worked. I finally had to give in a bake a batch of cookies. I know, I know… I should have stuck to the plan, but I am still human after all. I broke down and made these Double Chocolate Macadamia Cookies! We’ll just consider this my cheat day. Enjoy!
Double Chocolate Macadamia Nut Cookies
- 1 Cup All-Purpose Flour
- 3 Tbsp. Cocoa Powder
- ⅔ Cup Granulated Sugar
- ½ Tsp. Baking Powder
- ¼ Tsp. Baking Soda
- ¼ Tsp. Salt
- 5 Tbsp. Butter Softened
- 1 Large Egg Beaten
- ⅔ Cup White Chocolate Morsels
- ¼ Cup Macadamia Nuts
Preheat oven to 375°. In a large bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt. Add in butter and egg. Stir until completely mixed. Fold in white chocolate and nuts. Line baking sheet with parchment paper. Using a tablespoon, drop dough onto cookie sheet, leaving space between each drop. Bake for 8-10 minutes. Allow the macadamia nut cookies to cool on sheet for 2 minutes and then move to cooling rack.
