Hummus and Veggie Roll
  • ½ Red Bell Pepper, Sliced
  • 1 Cup Carrots, Shredded
  • 1 Green Onion, Sliced
  • 1 Tbsp. Extra Virgin Olive Oil
  • 2 Flour Tortilla Shells
  • 2 Tbsp. Roasted Red Pepper Hummus
  • 2 Romaine Lettuce Leaves, Washed and Patted Dry
  1. In a small pan, over medium heat, cook peppers, carrots, and onions in olive oil until veggies are tender.
  2. Remove pan from heat and set aside.
  3. Using back of spoon, evenly spread 1 tbsp. of hummus on each tortilla shell.
  4. Place one lettuce leaf down the center of each tortilla shell, on top of the hummus.
  5. Evenly spread a single layer of veggies onto tortilla.
  6. Roll the tortilla until completely closed.
  7. Slice into bite size pieces and serve.
