Hidden-Veggie Freeze Pops
Am I the only one having trouble getting kids to eat their vegetables? I just don’t understand it! I’ve always ate my veggies and never had a hard time trying anything new. With all of the junk/fast foods shown on television it’s no wonder kids are reluctant to eat anything good for them. I don’t want to force it on them because that would make them want to eat it less. I’ve also tried cooking them several different ways. Sometimes it’s a hit and sometimes it’s a miss.
Since the kids are out of school for the summer, they are being more active and using up more energy so it’s important for them to eat their veggies (or even anything remotely good for them). One thing the kiddos love are anything sweet and cool this time of year. I made this treat and snuck in some veggies. I let them eat these hidden-veggie freeze pops and then told them what was in it. After being told repeatedly they don’t like carrots they all of a sudden loved them after eating these. Enjoy!
Hidden-Veggie Freeze Pops
Ingredients
- 2 Cups Shredded Carrots Steamed
- 2 Cups 100% Orange Juice No Pulp
- 2- 0.07 Packets Stevia
Instructions

In a food processor, blend carrots until they are a smooth consistency. Add the juice and stevia to the processor and blend on medium speed until completely mixed. Pour mixture into freeze pop molds and freeze for at least 2 hours. Remove freeze pops from molds and serve.
