Ingredients
- 10 Large Strawberries Sliced
- 3 Tsp. Sugar
- 1 Tsp. Light Corn Syrup
- ½ Tsp. Lemon Zest
- Cake
- 4 Tbsp. All-Purpose Flour
- 4 Tbsp. Granulated Sugar
- ¼ Tsp. Baking Powder
- 3 Tbsp. Vanilla Soy Milk
- 1 Tbsp. Cooking Oil
- 1 Tsp. Lemon Extract
- 1 Tsp. Lemon Zest
- 1 Egg
- 4 Drops Yellow Food Color
Instructions

In small microwaveable bowl, heat ingredients for filling for 30 seconds. Pour filling into ramekin or other microwavable bowl.

In small mixing bowl, mix dry ingredients for cake, then mix in remaining ingredients for cake. Mix until batter is smooth. Evenly pour batter over strawberry filling. Microwave for 1 ½ minutes.

Wow, that looks too good to be true… seriously, I need try this microwave cake thing! =) Although I have been trying not to go down that path for fear of the effect it will have on my healthy battle…. but this one is mostly fruit so it may win out!
