Orange Raspberry Loaf Cake - The Kreative Life

Orange Raspberry Loaf Cake
 
Ingredients
  • 2 Cups Cake Flour
  • 1 Cup Granulated Sugar
  • ½ Tsp. Baking Soda
  • ½ Tsp. Salt
  • 6 Tbsp. Virgin Coconut Oil
  • ½ Cup Whole Milk
  • 3 Eggs, Beaten
  • 2 Tbsp. Orange Juice
  • 1 Tbsp. Orange Extract
  • 1 Tbsp. Orange Zest
  • ½ Cup Fresh Raspberries
Instructions
  1. Preheat oven to 350°. Oil and flour loaf pan. Set aside. In a medium mixing bowl, combine flour, sugar, baking soda, and salt. In a separate mixing bowl, combine oil, milk, and eggs. Pour egg mixture into flour mixture and combine well. Add juice, extract, and zest to mixture. Using mixer, blend on medium speed for 2 minutes. Carefully fold in raspberries to mixtures. Pour batter into pan. Bake for 50-60 minutes or until cake test is passed. Remove pan from oven and let cake cool in pan for 15 minutes. Remove cake from pan and allow to cool completely on rack.
