Strawberry Mango Parfait - The Kreative Life

As you can read here, I’ve been finding ways to stay away from this heat. Maybe I shouldn’t complain because we’re just getting over a pretty cold winter, but I was never expecting Colorado to get hot so soon. There’s just so much ice water I can drink. I needed something a little different. Also, my husband isn’t one to drink fruity drinks, except as my official taste tester. I made something cool and fruity that we both would like. Enjoy!

Strawberry Mango Parfait

Ingredients
  • 20 Large Strawberries, Sliced
  • 2 Tbsp. Sweetened Condensed milk
  • 8 Oz. Whipped Cream
  • 2 Large Mangos, Peeled, Pitted, Diced
Instructions
  1. In a food processor, blend 10 strawberries and milk until texture is smooth. Place mixture in bowl and fold in half of the whipped cream. Let mixture chill in freezer for 10 minutes. In a serving glass, layer remaining sliced strawberries, strawberry cream mixture, mangos, remaining whipped cream. (Optional: Top with halved strawberry) Serve immediately.
