I haven’t been doing much Christmas baking this year. I know if I get carried away with baking, then I’d get carried away with eating all of those sweets. What can I say, I want to watch my girlish figure (It’s a joke, I’m seven months pregnant). Now that Christmas is just a few days away, I’ve finally decided to bake some sweets and to see how much will power I have. Maybe they’ll last until Christmas. Maybe they won’t. All I know is that these White Chocolate Peppermint Brownies are moist, chocolaty, and tasty. Enjoy!
- 1½ Cup Sugar
- ¾ Cup Flour
- ½ Cup Cocoa
- ½ Tsp. Salt
- ½ Tsp. Baking Powder
- 3 Eggs
- ¾ Cup Vegetable Oil
- 1 Tsp. Vanilla Extract
- 1 Cup Peppermint Candy, Crushed
- 4 oz. White Chocolate, Chopped
- ½ Cup White Chocolate Morsels
- 1 Tbsp. Whole Milk
- Preheat oven to 350F.
- Grease 8x8 baking pan.
- In a large mixing bowl, on medium speed, combine sugar, flour, cocoa, salt, baking powder, eggs, oil, and extract.
- Using an oiled spatula, fold in ½ cup peppermint and all of chopped white chocolate.
- Bake for 20-25 minutes.
- In a microwavable cup, heat morsels and milk for 30 seconds.
- Remove from microwave and stir.
- If chocolate is not completely melted, heat for 30 more seconds.
- Remove brownies from oven and pour white chocolate mixture over brownies.
- Spread evenly with a spoon.
- Sprinkle remaining peppermint over white chocolate, before it cools.
- Allow brownies to cool, then serve.
