White Chocolate Peppermint Brownies

I haven’t been doing much Christmas baking this year. I know if I get carried away with baking, then I’d get carried away with eating all of those sweets. What can I say, I want to watch my girlish figure (It’s a joke, I’m seven months pregnant). Now that Christmas is just a few days away, I’ve finally decided to bake some sweets and to see how much will power I have. Maybe they’ll last until Christmas. Maybe they won’t. All I know is that these White Chocolate Peppermint Brownies are moist, chocolaty, and tasty. Enjoy!

White Chocolate Peppermint Brownies
Ingredients
- 1 1/2 Cup Sugar
- 3/4 Cup Flour
- 1/2 Cup Cocoa
- 1/2 Tsp. Salt
- 1/2 Tsp. Baking Powder
- 3 Eggs
- 3/4 Cup Vegetable Oil
- 1 Tsp. Vanilla Extract
- 1 Cup Peppermint Candy Crushed
- 4 oz. White Chocolate Chopped
- 1/2 Cup White Chocolate Morsels
- 1 Tbsp. Whole Milk
Instructions

Preheat oven to 350F.

Grease 8x8 baking pan.

In a large mixing bowl, on medium speed, combine sugar, flour, cocoa, salt, baking powder, eggs, oil, and extract.

Using an oiled spatula, fold in 1/2 cup peppermint and all of chopped white chocolate.

Bake for 20-25 minutes.

In a microwavable cup, heat morsels and milk for 30 seconds.

Remove from microwave and stir.

If chocolate is not completely melted, heat for 30 more seconds.

Remove brownies from oven and pour white chocolate mixture over brownies.

Spread evenly with a spoon.

Sprinkle remaining peppermint over white chocolate, before it cools.

Allow brownies to cool, then serve.
