Pasta is one of my favorite foods! I love baking large pans of different types of pastas and eating it for days.
One time I also got the bright idea of baking as many pasta dishes as I possibly could. I then separated the pasta into edible portions, placed them in freezer bags, and put the bags in the freezer.
I thought it was ingenious to cook only once that month and microwave whatever we felt like eating for dinner that night.
Needless to say, my husband was not very happy by the end of the month because he ate pasta almost every night for a month.
Well, here is another one of my pasta creationz. I didn’t cook enough to last for a month. Ok, maybe just for a couple of days. Enjoy!
Ingredients
1 Lb. Box Mezze Penne
1 Cup Frozen Spinach, Chopped
2 Boneless Skinless Chicken Breast, Cooked and Diced
1 Cup Cream Cheese
¼ Cup Heavy Whipping Cream
2 Green Onions, Chopped
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
½ Tsp. Cayenne Pepper
¼ Tsp. Coarse Sea Salt
Directions
Cook penne until it is al dente. Strain water from pasta and set aside. In medium sauce pan, on low to medium heat, cook chicken, cheese, cream, onions. Stir in garlic powder, onion powder, pepper, and salt. Let simmer for 10 minutes, stirring occasionally. Add creamy spinach to pasta. Serve with bread and salad.
